My friend and I were desperately craving a s'more, but because we had no campfire or marshmallow roasting equiptment we looked into some other options...
And so came the S'more Cookie Bar, a chewy marshmallow and chocolatey cookie covered with sweet chocolate chips and lightly roasted mini marshmallows, which become slightly crispy on top as they cool!
200g Self-Raising Flour
150g Unsalted Butter
90g Light Brown Sugar
90g Caster Sugar
125g Mini Marshmallows
90g Chocolate Chunks/Chips
a pinch of salt
1/2 tsp Baking Powder
1tsp Vanilla Extract
STEP 1: Preheat the oven to 200°C or 180°C fan oven. Using an electric whisk cream together the butter and both types of sugar.
STEP 2: Then, using the whisk on a lower speed, beat the eggs and vanilla extract.
STEP 3: Fold in the flour, baking powder and salt.
STEP 4: Stir in the 70g of the chocolate chips, and 1/4 of the marshmallows.
STEP 5: Grease and line a baking pan and squash the cookie dough into it, as equally as you can. Put in the oven and Bake for 10-12mins (until just set on top and golden)
STEP 6: Sprinkle the rest of the marshmallows and chocolate chips on top and put into the oven for 3-4mins (Until brown, like a roasted marshmallow)
Take them out and let stand for a few minutes in the pan. Then take out and let cool on a wire rack for a further 5mins. Use as sharp a knife as you can because the marshmallows are quite gooey, and cut into pieces.
